Matcha Granola

Recipe

3 cups of rolled oats

2 cups of mixed seeds such as almonds, walnuts, whole flaxseeds and chia seeds

¼ cup of brown sugar

2 tablespoons of oil

¼ cup of maple syrup

2 teaspoons of vanilla extract

1 teaspoon of salt

1 cup of fresh or dried blueberries

2 teaspoons matcha powder

Directions

  1. Preheat your oven to 250 degrees F.
  2. In a large bowl combine oats, nuts and brown sugar.
  3. In a separate bowl, combine oil m maple syrup, vanilla and salt. Pour over the oat mixture and mix well. Spread the deliciously sticky mixture out onto two baking sheets and bake for 1 hour to 1 hour 15 minutes. Don’t walk away yet! Stir every 15 minutes.
  4. Remove the now toasted mixture from the oven and scrape it into a large bowl. Let it cool down for a few minutes then sprinkle matcha and over and toss to combine.
  5. Keep in an airtight container. Serve with fresh blueberries or your fruit of choice. Yum!
